Lunch kampong-style at Mom's

My mom celebrated her birthday 2 days ago amidst family (except me [boohoo] coz busy with official work) and friends at Similajau National Park. I had the fortune to devour the goodies she brought back from Bintulu.

1st: the cincalok... had to get a 2nd helping of steamed rice for that...



2nd: stir fried young midin (wild fern found in secondary forests just beside the road) in oyster sauce... a must try if you come to Sibu



3rd: for proteins... some deep fried chunks of juicy salmon



Didn't need any soup (save the winter melon soup for later) to wash down the whole lot coz my saliva excreted at a rate so fast (eyew!)... you know what I mean. ^-^

Btw, thanks Mom for another mouth-watering lunch and happy belated birthday!

Belated birthday greetings to your mum from me too...and may she be blessed with another grandchild this year (Tell that fella he can change gear already! LOL!!).

My friend's coming from Bintulu tomorrow and he's bring me not one, but TWO bottles of cincaluk!!! Have you tried using it to cook tapioca leaves? Yummy!!!

Suituapui, it's the 'bubuk' (shrimp) season so cincalok's aplenty.. so fresh, so sweet.. good thing your friend's bringing 2 bottles!

I'll convey your wishes to my mom, stp. Thanks on her behalf. How do you cook cincalok with tapioca leaves?

Pound ginger - 2 inches. Also need serai, 2 stalks, and pound the "bulbs". 1 chilli - remove stalk and insides/seeds (but nowadays, 40 cents each and not hot at all!) Pound tapioca leaves - estimate on ebig soup bowl (Lazy people can use blender!).

Fry ginger in oil till fragrant, throw in serai and chilli, stir for a while, then add 2-3 tablespoons of cincaluk, then add tapioca leaves and stir-fry. Add a pinch of msg. Will need more oil if u want a vege dish. Otherwise add water and let it simmer till the flavour of the cincalok comes out.

Reduce amount of cincalok, if it is salty. Don't add salt; cincalok salty enough! Yummy!!!

I cooked some for my Iban colleague. She said never heard of people cooking it like dat, but once she tasted!!! Immediately asked me how to cook!!!
